About the speaker

Lars Odefey was born in 1983 and studied ecological agricultural sciences in Eberswalde, Hohenheim, and Prague. After seven years of employment at the Thünen Institute, at the consulting firm grüneköpfe in Berlin, at one of Germany’s largest ham producers (Abraham), as well as various stays abroad (including at Prince Charles’s Duchy Home Farm), he founded the poultry farm Odefey & Töchter on his parents’ farm in 2017, which supplies top restaurants and private customers with chickens, guinea fowl, ducks, and game.

Born out of necessity during the 2021 COVID-19 pandemic and the restaurant shutdown, Lars Odefey set up a small online shop for B2C meat sales overnight. From his farm in the Lüneburg Heath, he now ships around 3,000 packages each year—throughout Germany and Austria. Each animal is hand-selected from the pasture in the order in which orders are received, slaughtered, and shipped to customers overnight.
